No-Bake Cookies and Cream Flower Pot Cake (makes 6 "flower pots")
50 Oreos, filling removed
400ml Heavy cream
To decorate
Cadbury Mini Eggs
Chocolate Rocks
Strawberries
1. Crush 8 oreos (i.e. 16 halved shells) to make up the "soil" portion and reserved.
2. Whisk the heavy cream to stiff peaks.
3. Place one oreo shell into the flower pot, scoop in some whipped cream and layer with another oreo shell. Repeat process till you reach the brim of the flower pot, ending with whipped cream.
5. Chill in the refrigerator, overnight preferred, or at least for 2 hours if it's an Easter emergency.
Thoughts: The "flower pots" I used are food-safe containers which are not easy to find, so I guess any other food-safe containers will do. Otherwise teacups will make an adorable substitute too! That said, take note that the amount of oreos used will differ depending on the container used. My pots measures about 7.5cm in diameter and 8cm in height, for which I used 6 oreos (12 shells) each.
After chilling for sometime in the fridge, the oreo shells will absorb moisture from the whipped cream, soften up and becomes cake-like. We get "cake" and we didn't have to bake or clean the kitchen. Stress-free dessert to prepare for, especially during festive celebrations. Yippie!
Technically speaking, only 2 ingredients are needed. And it doesn't even matter if it turned out messy because everything will be covered by the crushed oreo "soil". You can also let the kids participate by letting them decorate the flower pots. Saves some time that way while keeping them occupied too. Or better yet, make it one of the kids' activity for your Easter celebration. They can "dig into it" literally, after they are done decorating. That's one simple dessert that's festive, fun for the kids and good to eat! Happy Easter!
